
Fried Rice Musubi
Hawaiian-Japanese fusion rice balls with savory fillings

Prepare the riceIn a large bowl, mix the warm cooked rice with 1 tablespoon of sesame oil and 1 tablespoon of furikake. Gently fold until well combined and set aside.

Cook the SpamHeat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the Spam slices and fry for 2 minutes on each side until crispy and browned. Remove from pan and set aside.

Make the fried rice mixtureIn the same skillet, add the remaining vegetable oil. Add diced carrots and sauté for 2-3 minutes until slightly softened. Add green peas and cook for another minute. Push vegetables to one side, pour the beaten eggs into the empty space and scramble until just cooked. Mix the eggs with the vegetables.

Season the rice mixtureAdd 2 cups of the prepared rice to the skillet with vegetables and eggs. Pour in soy sauce and mirin, then stir to combine. Cook for 3-4 minutes, stirring occasionally. Stir in the green onions and remove from heat.

Assemble the musubiPlace a musubi mold or a clean Spam can (with both ends removed) on a clean surface. Place a strip of nori on a cutting board with the rough side facing up. Place the mold on top of the nori. Add 2 tablespoons of plain seasoned rice and press down firmly. Add 2 tablespoons of the fried rice mixture, then place a slice of fried Spam on top. Add another 2 tablespoons of plain seasoned rice and press firmly.

Wrap and sealRemove the mold while keeping the stack intact. Quickly wrap the nori around the rice stack, using a few grains of rice to seal the end of the nori. Repeat with remaining ingredients.
