
Spam Fried Rice
A savory Hawaiian-inspired dish with crispy Spam and fluffy rice

Prepare the riceIf using freshly cooked rice, spread it on a baking sheet and let it cool completely. For best results, use day-old refrigerated rice as it has less moisture and will fry better.

Crisp the SpamHeat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over medium-high heat. Add the diced Spam and cook for 3-4 minutes until crispy and golden brown. Remove from the wok and set aside, leaving the flavorful oil in the pan.

Cook the aromaticsIn the same wok, add another tablespoon of oil if needed. Add the diced onion and cook for 2 minutes until translucent. Add the minced garlic and white parts of the green onions, cooking for another 30 seconds until fragrant.

Scramble the eggsPush the aromatics to one side of the wok and add the remaining tablespoon of oil to the empty side. Pour in the beaten eggs and gently scramble until just set but still moist, about 1-2 minutes.

Combine and fry the riceAdd the cold rice to the wok, breaking up any clumps with a wooden spoon. Stir-fry for 3-4 minutes until the rice is heated through and beginning to crisp slightly. Add the thawed peas and carrots, stirring to incorporate.

Season the dishDrizzle the soy sauce and oyster sauce over the rice mixture. Add the white pepper and stir well to distribute the seasonings evenly. Return the crispy Spam to the wok and toss to combine everything.

Finish and serveDrizzle with sesame oil and stir one final time. Remove from heat and garnish with the green parts of the sliced green onions. Serve hot, with additional soy sauce on the side if desired.
