  1. Prepare the rice
    Cook the rinsed rice according to package instructions or in a rice cooker. While still hot, mix the rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice gently. Let cool to room temperature.
  2. Marinate the chicken
    In a bowl, combine soy sauce, mirin, and grated ginger. Add chicken thighs and marinate for at least 15 minutes. Heat 1 tablespoon oil in a pan over medium heat and cook chicken for 4-5 minutes per side until cooked through and nicely browned. Let rest for 5 minutes, then slice into thin strips.
  3. Cook the vegetables
    Bring a small pot of water to boil. Blanch broccoli florets for 2 minutes, then immediately transfer to ice water to stop cooking. Drain well. In the same water, blanch julienned carrots for 1 minute, then cool in ice water and drain.
  4. Make tamagoyaki (rolled omelette)
    Beat eggs in a bowl with a pinch of salt. Heat 1 tablespoon oil in a rectangular pan (or regular frying pan) over medium-low heat. Pour a thin layer of egg mixture and when it's almost set but still slightly wet on top, roll it up from one side to the other. Push the rolled egg to one side, add more oil if needed, and repeat with remaining egg mixture, rolling it around the first roll each time. When finished, let cool slightly and slice into 1/2-inch thick pieces.
  5. Prepare additional components
    Arrange the cherry tomato halves on a paper towel to remove excess moisture. Toast sesame seeds in a dry pan until fragrant, about 2 minutes, stirring constantly to prevent burning.
  6. Assemble the bento
    Divide the cooled rice between two bento boxes, filling about half of each box. Arrange sliced chicken, broccoli, carrots, tamagoyaki slices, and cherry tomatoes in separate sections. Sprinkle toasted sesame seeds over the vegetables and place nori strips on top of the rice.
  7. Add final touches
    For an authentic presentation, ensure components don't mix by using small food dividers or arranging densely. If available, add a small container of soy sauce or other condiment in a separate compartment. Secure the bento box lid tightly.
