
Coronation Chicken Sandwich
A royal treat with curry-spiced chicken in creamy sauce

Prepare the chickenIf cooking chicken from raw, poach chicken breasts in simmering water with a bay leaf and some peppercorns for about 20 minutes until completely cooked through. Allow to cool, then shred using two forks or your fingers.

Make the curry sauceIn a large bowl, combine the mayonnaise, Greek yogurt, curry powder, mango chutney, and apricot jam. Mix thoroughly until all ingredients are well incorporated and the sauce has a smooth consistency.

Mix the chicken fillingAdd the shredded chicken to the curry sauce mixture. Stir in the toasted flaked almonds, chopped coriander, and lemon juice. Season with salt and pepper to taste. Fold everything together gently to ensure the chicken is evenly coated.

Toast the almondsIf not already toasted, place the flaked almonds in a dry frying pan over medium heat. Toast for 2-3 minutes, tossing frequently, until golden brown. Be careful not to burn them. Allow to cool before adding to the chicken mixture.

Assemble the sandwichesLay out the bread slices on a clean work surface. Divide the coronation chicken mixture evenly among four slices of bread, spreading it to the edges. Top with rocket or watercress leaves for a peppery crunch.

Complete and servePlace the remaining bread slices on top to complete the sandwiches. Press down gently. If desired, cut the sandwiches diagonally into triangles or straight across into rectangles. Serve immediately or wrap in parchment paper for a picnic or lunch box.
