  1. Prepare the vegetables
    Wash all vegetables thoroughly. Cut tomatoes into wedges, peel and slice cucumber into thick half-moons, thinly slice the red onion, and slice the green bell pepper into rings or strips.
  2. Assemble the base
    In a large shallow bowl or platter, arrange the tomatoes, cucumber, red onion, and green bell pepper. Traditional Greek salads are served with large chunks of vegetables rather than small pieces.
  3. Add the feta and olives
    Place the feta cheese on top of the vegetables as a whole slab or in large cubes. Scatter the Kalamata olives throughout the salad. Authentic Greek salad is never tossed together.
  4. Season the salad
    Sprinkle the dried oregano, sea salt, and freshly ground black pepper evenly over the vegetables and feta.
  5. Dress the salad
    Drizzle the extra virgin olive oil, red wine vinegar, and fresh lemon juice over the entire salad. Do not toss; allow the dressing to seep into the vegetables and feta naturally.
  6. Rest and serve
    Let the salad sit at room temperature for about 5-10 minutes before serving to allow the flavors to meld together. Serve with crusty bread to soak up the delicious dressing at the bottom of the dish.
