Prepare the ricePlace the rinsed rice and water in a rice cooker or heavy-bottomed pot. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.

Make sushi vinegarWhile rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan. Heat gently until sugar dissolves, then remove from heat and let cool to room temperature.

Season the riceTransfer the cooked rice to a large, wide bowl (traditionally a wooden sushi oke). Drizzle the vinegar mixture over the rice and fold gently with a rice paddle or wooden spoon, using a cutting motion to avoid crushing the grains. Fan the rice as you mix to help it cool and absorb the seasoning.

Prepare the seafoodEnsure all seafood is properly cleaned and sliced. If using frozen fish, make sure it's properly thawed in the refrigerator. Slice the salmon and tuna into thin, sashimi-style pieces about 1/4 inch thick.

Assemble the bowlsDivide the seasoned sushi rice among 4 bowls. Arrange the sliced salmon, tuna, shrimp, and avocado decoratively on top of the rice. Sprinkle with tobiko or ikura.

Add the garnishesDistribute the cucumber, pickled ginger, and nori strips among the bowls. Sprinkle with toasted sesame seeds for added texture and flavor.

Serve immediatelyServe the chirashi bowls with small dishes of soy sauce on the side. Each person can add soy sauce to taste. Enjoy while the rice is still slightly warm and the fish is cool.
