
Maki Sushi Rolls
Classic Japanese rolled sushi with fresh fish and vegetables

Prepare the RiceIn a medium saucepan, combine the rinsed rice with water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes.

Season the RiceIn a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large wooden or glass bowl (avoid metal). Drizzle the vinegar mixture over the rice while gently folding with a rice paddle. Fan the rice as you fold to help it cool to room temperature.

Prepare the FillingWhile the rice cools, prepare all your fillings. Slice the fish, avocado, and cucumber into thin strips. Tear the imitation crab into small pieces. Arrange all fillings on a plate for easy access during rolling.

Set Up Rolling StationPlace a bamboo sushi mat on a clean work surface. Cover it with plastic wrap to prevent rice from sticking. Have a small bowl of water with a splash of rice vinegar nearby to wet your hands (this prevents rice from sticking to fingers).

Roll the SushiPlace a sheet of nori shiny-side down on the mat. With wet hands, take about 3/4 cup of rice and spread it evenly over the nori, leaving a 1-inch strip uncovered at the top edge. For inside-out rolls (uramaki), flip the nori so the rice faces down. Arrange your chosen fillings in a line across the center of the rice or nori.

Form and Seal the RollUsing the bamboo mat, lift the bottom edge and roll forward, enclosing the fillings. Apply gentle pressure to shape the roll into a cylinder. Continue rolling until you reach the uncovered edge of nori. Dab the edge with a little water to seal the roll.

Cut the RollsWith a sharp, wet knife, slice the roll into 6-8 pieces. Clean and re-wet the knife between cuts for clean slices. For best results, cut in one smooth motion rather than sawing.

Serve and GarnishArrange the sushi rolls on a serving plate. Sprinkle with toasted sesame seeds if desired. Serve with small dishes of soy sauce, wasabi, and pickled ginger. For a traditional presentation, add a small mound of shredded daikon radish to the plate.
