
Sushi Bake
Deconstructed sushi casserole with creamy seafood topping

Prepare the sushi riceIn a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm cooked rice gently but thoroughly. Let the seasoned rice cool to room temperature.

Create the seafood toppingIn a medium bowl, combine the shredded imitation crab meat, softened cream cheese, Japanese mayonnaise, and sriracha sauce. Mix until well incorporated and creamy.

Layer the casseroleSpread the seasoned sushi rice evenly in a 9x13 inch baking dish, pressing down lightly. Sprinkle 1 tablespoon of furikake seasoning over the rice layer. Then spread the seafood mixture evenly on top of the rice.

Bake the sushi casserolePreheat the oven to 375°F (190°C). Bake the casserole for 15 minutes or until the top is slightly golden and bubbly around the edges.

Add the toppingsRemove the baked sushi from the oven and immediately sprinkle with additional furikake and tobiko. Allow to cool slightly for 5 minutes before adding the remaining toppings.

Garnish and serveArrange sliced avocado, cucumber slices, and strips of nori on top of the baked sushi. Sprinkle with sliced green onions. Serve warm with additional nori sheets on the side for wrapping.
