
Chirashi Sushi

Prepare the riceWash the rice until the water runs clear. Place in a rice cooker or pot with 2 1/4 cups water and cook according to package instructions, usually about 15-20 minutes. Let the rice rest for 10 minutes after cooking.

Make sushi vinegarWhile the rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan. Heat over low heat until sugar dissolves, then remove from heat and let cool.

Season the riceTransfer the cooked rice to a large wooden bowl (hangiri) or a large non-metallic bowl. Pour the sushi vinegar over the rice and gently fold with a rice paddle using cutting motions. Fan the rice while mixing to help it cool quickly and develop a glossy texture. Cover with a damp cloth until ready to use.

Prepare the egg garnish (Tamagoyaki)Heat a small non-stick pan over medium heat. Pour a thin layer of the beaten egg mixture into the pan. When it's nearly set but still slightly wet on top, roll it up to one side of the pan. Add another thin layer of egg, lifting the rolled portion to let the new egg flow underneath. When set, roll again. Repeat until all egg mixture is used. Let cool, then slice into thin strips.

Prepare the seafood and vegetablesSlice the fish into thin, bite-sized pieces. Julienne the cucumber, slice the avocado, and prepare other toppings as needed. Keep refrigerated until ready to assemble.

Assemble the chirashi sushiDivide the seasoned rice among four bowls. Arrange the sliced fish, shrimp, egg strips, avocado, cucumber, and nori strips decoratively on top of the rice. Sprinkle with tobiko for color and texture.

Add final garnishesGarnish with pickled ginger on the side. Serve with small dishes of soy sauce and wasabi for dipping the fish.
