Prepare the riceCombine the rinsed rice and water in a rice cooker and cook according to manufacturer's instructions. Alternatively, cook the rice in a heavy-bottomed pot: bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.

Season the riceIn a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar dissolves. Transfer the cooked rice to a large wooden bowl and drizzle the vinegar mixture over it. Gently fold the rice with a wooden paddle, using a cutting motion to avoid crushing the grains. Fan the rice while mixing to cool it quickly. Cover with a damp towel until ready to use.

Prepare the fillingsArrange all your fillings on a platter: sliced tuna, salmon, avocado, cucumber, and tobiko. Place the wasabi, pickled ginger, and soy sauce in small bowls for serving.

Set up the rolling stationPlace a small bowl of water (for wetting hands) and the halved nori sheets on the table. Have the seasoned rice and prepared fillings within easy reach. Set individual plates for each person.

Roll the temakiTake a half sheet of nori and hold it with the shiny side down and the longer side horizontally. Wet your hands to prevent sticking, then take about 2-3 tablespoons of rice and spread it on the left third of the nori sheet, leaving about 1/2 inch of space at the bottom.

Add fillingsPlace a small amount of your desired fillings (fish, avocado, cucumber, tobiko) diagonally across the rice. Add a small dab of wasabi if desired. Be careful not to overfill, as this will make rolling difficult.

Form the coneFold the bottom left corner of the nori over the fillings, then continue rolling into a cone shape. The moisture from the rice will help seal the roll. Ensure the end of the nori sticks to the outside of the cone.

Serve immediatelyPlace the finished temaki on individual plates and serve right away with soy sauce for dipping. Temaki is best eaten immediately after making to maintain the crispness of the nori.
