
Chinese Lotus Root Soup

Prepare the pork ribsRinse the pork ribs under cold water. Place them in a pot, cover with cold water, and bring to a boil for 5 minutes. Drain and rinse again to remove impurities. This will give you a clearer soup.

Prepare the lotus rootPeel the lotus root and slice into 1/4-inch rounds. Immediately place in a bowl of cold water with a splash of vinegar to prevent discoloration. Rinse the slices before adding to the soup.

Start the soup baseIn a large pot, add the blanched pork ribs, water or chicken stock, sliced ginger, and smashed garlic. Bring to a boil, then reduce heat to a gentle simmer. Skim off any foam that forms on the surface.

Add the lotus root and other ingredientsAfter the soup has simmered for 30 minutes, add the lotus root slices, red dates, goji berries, and Shaoxing wine (if using). Continue to simmer for another 45-60 minutes until the lotus root is tender and the pork is falling off the bone.

Season the soupWhen the soup is almost done, add white pepper and salt to taste. The soup should have a subtle, sweet flavor from the lotus root and dates, balanced with the savory pork.

Serve the soupLadle the hot soup into bowls, ensuring each serving has pieces of lotus root and pork ribs. Garnish with chopped green onions and cilantro leaves if desired. Serve immediately while hot.
