  1. Prepare the broth base
    In a large pot, bring the fish or chicken broth to a simmer over medium heat. Add the minced ginger and garlic, and cook for 2 minutes until fragrant.
  2. Add vegetables
    Add the sliced shiitake mushrooms and bamboo shoots to the simmering broth. Cook for about 5 minutes until the mushrooms have softened.
  3. Season the soup
    Stir in the soy sauce, rice vinegar, chili oil, and white pepper. Adjust the seasonings to achieve the desired balance of hot and sour flavors. Allow the soup to simmer for 5 minutes to blend the flavors.
  4. Cook the fish
    Gently add the fish cubes to the soup and simmer for about 5 minutes until the fish is just cooked through and flakes easily with a fork. Be careful not to overcook the fish.
  5. Thicken the soup
    Stir the cornstarch mixture again and slowly pour it into the soup while stirring continuously. The soup will start to thicken slightly. Simmer for another 2 minutes.
  6. Create egg ribbons
    Reduce the heat to a gentle simmer. While stirring the soup in a circular motion, slowly pour in the beaten eggs in a thin stream to create delicate egg ribbons throughout the soup.
  7. Final seasoning
    Taste the soup and adjust seasonings if needed with additional vinegar, soy sauce, or chili oil according to your preference for hot and sour balance.
  8. Serve
    Ladle the hot soup into bowls and garnish with sliced green onions and chopped cilantro. Serve immediately while hot.
