
Crab and Corn Soup
Creamy seafood soup with sweet corn and tender crab meat

Prepare the vegetablesHeat olive oil in a large heavy-bottomed pot over medium heat. Add the onion, celery, and bell pepper, and sauté until softened, about 5-6 minutes. Add the garlic and cook for another 30 seconds until fragrant.

Make the corn baseAdd 3 cups of the corn kernels to the pot, reserving 1 cup. Stir to combine with the vegetables, then add the seafood stock. Bring to a simmer and cook for 10 minutes until the corn is tender.

Blend and thickenUsing an immersion blender, carefully blend about half of the soup to create a creamy base while leaving some texture. If you don't have an immersion blender, transfer half the soup to a standard blender, blend until smooth, then return to the pot. Add the heavy cream and butter, stirring until the butter melts completely.

Add remaining corn and seasoningsAdd the reserved 1 cup of corn kernels to the soup and simmer for 3-4 minutes. Season with salt, pepper, and cayenne (if using). Adjust the consistency with additional stock or water if needed.

Incorporate the crab meatGently fold in the crab meat, being careful not to break up the lumps too much. Simmer for just 1-2 minutes to heat the crab through without overcooking it. Remove from heat and stir in the fresh lemon juice.

Serve and garnishLadle the soup into warm bowls. Garnish with fresh chives and additional crab meat if desired. Serve immediately with crusty bread on the side.
