
Corn and Crab Chowder
Creamy seafood soup with sweet corn and tender crab meat

Prepare the baseIn a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crisp, about 5-6 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the fat in the pot.

Sauté the vegetablesAdd the onion, celery, and bell pepper to the pot and cook in the bacon fat until softened, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Sprinkle the flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste.

Build the chowderGradually whisk in the seafood stock, stirring constantly to prevent lumps. Add the diced potatoes, corn kernels, bay leaf, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.

Add dairy and crabReduce heat to low and stir in the half-and-half. Simmer gently for 5 minutes (do not boil). Remove the bay leaf. Gently fold in the crabmeat and fresh thyme, being careful not to break up the crab lumps too much. If using, add the cayenne pepper.

Season and serveTaste and adjust seasoning with salt and pepper as needed. Heat through for 2-3 minutes until the crab is warm. Ladle the chowder into bowls and garnish with the reserved crispy bacon bits and additional fresh thyme if desired.
