Prepare the crab meatCarefully check the crab meat for any remaining shell pieces or cartilage. Keep refrigerated until ready to use. If using frozen crab meat, thaw completely and drain excess liquid.

Sauté the vegetablesIn a large heavy-bottomed pot or Dutch oven, melt the butter over medium heat. Add the diced onion, celery, and carrot. Cook for 5-7 minutes until vegetables have softened but not browned. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Create the baseSprinkle the flour over the vegetables and stir constantly for 2 minutes to create a roux. Gradually whisk in the seafood stock, making sure to remove any lumps. Add the bay leaves and bring the mixture to a gentle simmer.

Add flavoringsPour in the dry sherry (if using), and add the Old Bay seasoning and cayenne pepper. Simmer for 10 minutes to allow the flavors to meld and the soup to thicken slightly. Stir occasionally to prevent sticking.

Incorporate the creamReduce heat to low and stir in the heavy cream. Simmer gently for 5 minutes, being careful not to let the soup boil after adding the cream, which could cause it to separate.

Add the crabGently fold in the crab meat, being careful not to break up the lumps too much. Season with salt and freshly ground black pepper to taste. Simmer for 2-3 minutes just until the crab is heated through.

Final adjustmentsRemove the bay leaves. Taste the soup and adjust seasonings if necessary. If the soup is too thick, add a little more stock; if too thin, simmer a few minutes longer.
