Prepare the spice baseIn a dry pan over medium heat, toast the Sichuan peppercorns and dried chilies until fragrant, about 2-3 minutes. Remove from heat and set aside. Be careful not to burn them as this will create a bitter flavor.

Create the hot pot brothIn a large pot or specialized hot pot vessel, add chicken stock, the toasted Sichuan peppercorns, dried chilies, doubanjiang, minced garlic, sliced ginger, white parts of green onions, Chinese cooking wine, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 30 minutes to allow flavors to meld.

Prepare the dipping ingredientsWhile the broth is simmering, arrange all dipping ingredients on platters. Slice the beef and lamb very thinly (freezing them for 30 minutes beforehand makes this easier). Clean and prepare all mushrooms. Cut tofu into cubes. Wash and chop vegetables into bite-sized pieces. Organize all ingredients on platters for easy access during dining.

Set up the hot pot stationTransfer the simmering broth to your hot pot setup, placing it in the center of the dining table on a portable burner. Keep the broth at a gentle simmer throughout the meal. Arrange all prepared ingredients around the hot pot so everyone can easily reach them.

Prepare dipping saucesPrepare individual dipping sauce bowls for each diner. A basic sauce can be made with equal parts soy sauce and black vinegar, a spoonful of chili oil, minced garlic, chopped green onions, and a pinch of sugar. Allow diners to customize their own sauces according to preference.

Cook and enjoyDiners use their chopsticks or small strainers to place ingredients into the simmering broth. Thinly sliced meats cook in 10-30 seconds; vegetables and mushrooms may take 2-3 minutes; tofu needs 2-3 minutes to absorb flavors. After cooking, dip ingredients in your personalized sauce before eating. Continue adding broth as needed to maintain the level.
