  1. Prepare the filling
    In a mixing bowl, combine ground pork, chopped scallions, minced ginger, garlic, soy sauce, sesame oil, and white pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Form the wontons
    Place a wonton wrapper on a clean work surface. Add 1 teaspoon of filling to the center. Moisten the edges with water using your fingertip. Fold the wrapper in half to form a triangle, pressing the edges to seal. Take the two corners of the triangle and bring them together, overlapping slightly, and press to seal. Repeat with remaining wrappers and filling.
  3. Prepare the broth
    In a large pot, bring chicken broth to a simmer over medium heat. Add rice wine and a dash of soy sauce, adjusting to taste. Keep the broth hot but not boiling vigorously.
  4. Cook the wontons
    Carefully drop the wontons into the simmering broth, making sure not to overcrowd the pot. Cook for about 4-5 minutes until they float to the surface and the filling is cooked through.
  5. Add vegetables
    Add the chopped bok choy to the soup and simmer for an additional 1-2 minutes until the vegetables are just tender but still vibrant green.
  6. Serve the soup
    Ladle the hot soup with wontons and vegetables into bowls. Garnish with fresh cilantro leaves and additional chopped scallions if desired. Serve immediately while hot.
