Prepare the fillingIn a mixing bowl, combine the chopped shrimp, grated ginger, minced garlic, chopped scallions, sesame oil, soy sauce, and white pepper. Mix thoroughly until well combined and slightly sticky.

Form the dumplingsPlace a teaspoon of the shrimp mixture in the center of each wonton wrapper. Wet the edges with water and fold in half to form a triangle. Press edges firmly to seal. If desired, bring the two lower corners together and pinch to form a traditional wonton shape.

Prepare the brothIn a large pot, bring the chicken broth to a simmer over medium heat. Add the rice wine or sherry and continue to simmer for 5 minutes to allow the flavors to meld.

Cook the dumplingsGently drop the dumplings into the simmering broth, being careful not to overcrowd the pot. Cook for about 3-4 minutes until they float to the surface and the filling is cooked through.

Add the vegetablesAdd the chopped bok choy to the soup and simmer for an additional 2 minutes until slightly wilted but still crisp and bright green.

ServeLadle the soup with dumplings into individual bowls. Garnish with fresh cilantro leaves and serve immediately while hot.
