Ingredients
Instructions
-
Prepare the pork fillingIn a large bowl, combine the ground pork, half of the chopped chives, 2 tablespoons soy sauce, 1 tablespoon sesame oil, ginger, garlic, and 2 tablespoons Shaoxing wine. Mix thoroughly until well combined and slightly sticky. Cover and refrigerate for 30 minutes to allow flavors to develop.
-
Prepare the shrimp fillingIn another bowl, mix the chopped shrimp with the remaining chives, 1 tablespoon soy sauce, 1 tablespoon sesame oil, and 2 tablespoons Shaoxing wine. Add 2 tablespoons cornstarch and mix well. Cover and refrigerate for 30 minutes.
-
Assemble Siu Mai dumplingsTake a dumpling wrapper and place about 1 tablespoon of the pork mixture in the center. Cup the wrapper in your hand and gently squeeze to form a basket shape, with the filling exposed at the top. The sides should be pleated and the bottom flat. Place on a parchment-lined tray dusted with cornstarch.
-
Assemble Har Gow dumplingsPlace 1 teaspoon of shrimp filling in the center of a dumpling wrapper. Fold the wrapper in half to form a half-moon shape. Pinch the edges together, then create pleats along the sealed edge by folding and pinching. Place on the prepared tray and cover with a damp cloth to prevent drying.
-
Prepare steamerLine bamboo steamer baskets with parchment paper or cabbage leaves. Bring the chicken stock to a simmer in a wok or large pot that can accommodate your steamer. The liquid should not touch the bottom of the steamer.
-
Steam the dumplingsArrange the dumplings in the steamer baskets, leaving about 1 inch between each dumpling as they will expand. Place the steamer over the simmering liquid, cover, and steam the Siu Mai for 8-10 minutes and the Har Gow for 6-7 minutes, or until the filling is cooked through.
-
Prepare dipping saucesWhile the dumplings are steaming, prepare dipping sauces by combining soy sauce with a little sesame oil in one dish, and black vinegar with chili oil in another dish.
-
Serve the platterCarefully transfer the steamed dumplings to a serving platter. Arrange them attractively, grouping similar types together. Serve immediately with the prepared dipping sauces, garnished with additional chopped chives if desired.
