  1. Prepare the pork filling
    In a large bowl, combine the ground pork, half of the chopped chives, 2 tablespoons soy sauce, 1 tablespoon sesame oil, ginger, garlic, and 2 tablespoons Shaoxing wine. Mix thoroughly until well combined and slightly sticky. Cover and refrigerate for 30 minutes to allow flavors to develop.
  2. Prepare the shrimp filling
    In another bowl, mix the chopped shrimp with the remaining chives, 1 tablespoon soy sauce, 1 tablespoon sesame oil, and 2 tablespoons Shaoxing wine. Add 2 tablespoons cornstarch and mix well. Cover and refrigerate for 30 minutes.
  3. Assemble Siu Mai dumplings
    Take a dumpling wrapper and place about 1 tablespoon of the pork mixture in the center. Cup the wrapper in your hand and gently squeeze to form a basket shape, with the filling exposed at the top. The sides should be pleated and the bottom flat. Place on a parchment-lined tray dusted with cornstarch.
  4. Assemble Har Gow dumplings
    Place 1 teaspoon of shrimp filling in the center of a dumpling wrapper. Fold the wrapper in half to form a half-moon shape. Pinch the edges together, then create pleats along the sealed edge by folding and pinching. Place on the prepared tray and cover with a damp cloth to prevent drying.
  5. Prepare steamer
    Line bamboo steamer baskets with parchment paper or cabbage leaves. Bring the chicken stock to a simmer in a wok or large pot that can accommodate your steamer. The liquid should not touch the bottom of the steamer.
  6. Steam the dumplings
    Arrange the dumplings in the steamer baskets, leaving about 1 inch between each dumpling as they will expand. Place the steamer over the simmering liquid, cover, and steam the Siu Mai for 8-10 minutes and the Har Gow for 6-7 minutes, or until the filling is cooked through.
  7. Prepare dipping sauces
    While the dumplings are steaming, prepare dipping sauces by combining soy sauce with a little sesame oil in one dish, and black vinegar with chili oil in another dish.
  8. Serve the platter
    Carefully transfer the steamed dumplings to a serving platter. Arrange them attractively, grouping similar types together. Serve immediately with the prepared dipping sauces, garnished with additional chopped chives if desired.
