
Chinese Chicken Lettuce Cups
Savory minced chicken with crunchy vegetables in lettuce wraps

Prepare the sauceIn a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and Sriracha (if using). Set aside until needed.

Cook the aromaticsHeat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant but not browned.

Brown the chickenAdd the ground chicken to the skillet, breaking it up with a wooden spoon. Cook for 5-6 minutes until no longer pink and slightly browned. Drain any excess liquid if necessary.

Add vegetablesAdd the diced red bell pepper and water chestnuts to the skillet. Stir-fry for 2-3 minutes until the pepper begins to soften but still maintains some crunch.

Incorporate the saucePour the prepared sauce over the chicken mixture and stir well to coat everything evenly. Cook for another 2 minutes until the sauce thickens slightly and coats all ingredients.

Finish the fillingStir in most of the sliced green onions (reserve some for garnish), and cook for another minute. Remove the skillet from heat.

Assemble the lettuce cupsArrange the lettuce leaves on a serving platter. Spoon approximately 3 tablespoons of the chicken mixture into the center of each lettuce leaf.

Garnish and serveSprinkle the filled lettuce cups with the remaining green onions, chopped cilantro, and toasted sesame seeds. Serve immediately while still warm, allowing diners to pick up and eat with their hands.
