  1. Prepare the sauce
    In a bowl, combine the soy sauce, mirin, sake, sugar, and dashi stock. Stir until the sugar is completely dissolved. Set aside.
  2. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add the sliced onions and grated ginger, cooking until the onions become translucent and slightly caramelized, about 5-7 minutes.
  3. Add the beef
    Add the thinly sliced beef to the skillet with the onions. Cook for about 1-2 minutes until the beef starts to change color but isn't fully cooked.
  4. Simmer with sauce
    Pour the prepared sauce over the beef and onions. Bring to a simmer, then reduce heat to low and cook for about 10-15 minutes until the beef is tender and the sauce has reduced slightly.
  5. Prepare eggs (optional)
    If using eggs, you can either crack them directly onto the simmering beef mixture and cover to poach for 2-3 minutes, or poach them separately in water.
  6. Serve the dish
    Place a generous portion of hot steamed rice in each bowl. Top with the beef and onion mixture, making sure to include some of the savory sauce. Garnish with chopped green onions and place a poached egg on top if desired.
