  1. Prepare the chicken
    Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. This ensures even cooking. In a small bowl, combine the garlic powder, paprika, oregano, salt, and pepper.
  2. Season and marinate
    Brush the chicken breasts with olive oil on both sides, then sprinkle the spice mixture evenly over both sides of each breast. Let the chicken marinate for at least 10 minutes at room temperature to allow the flavors to penetrate.
  3. Cook the chicken
    Preheat a grill or grill pan to medium-high heat. Cook the chicken breasts for 4-5 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Remove from heat and let rest for 3-5 minutes.
  4. Prepare the sauce
    While the chicken is resting, mix the mayonnaise and Dijon mustard in a small bowl. Set aside. Toast the hamburger buns lightly on the grill for about 30 seconds, cut side down.
  5. Assemble the burgers
    Spread the mayonnaise-mustard mixture on both sides of each bun. Place a lettuce leaf on the bottom half, followed by a chicken breast, tomato slices, red onion, and avocado slices if using. Top with the other half of the bun.
  6. Serve
    Serve immediately while the chicken is still warm and the buns are toasted. Pair with sweet potato fries, a green salad, or coleslaw for a complete meal.
