  1. Prepare the dough
    In a food processor, combine flour, salt, cayenne pepper, paprika, and garlic powder. Pulse a few times to mix. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
  2. Add cheese and form dough
    Add the grated cheddar cheese to the food processor and pulse briefly to incorporate. With the processor running, gradually add ice water until the dough just comes together. Be careful not to overmix.
  3. Roll and cut the dough
    Turn the dough onto a lightly floured surface and form into a rectangle. Roll out to approximately 1/4-inch thickness. Using a sharp knife or pizza cutter, cut the dough into strips about 1/2-inch wide and 6 inches long.
  4. Create the twists
    Twist each strip several times to create the classic cheese straw shape. Place the twisted strips on parchment-lined baking sheets, leaving about 1 inch between each straw.
  5. Apply egg wash and bake
    Brush each straw lightly with beaten egg and sprinkle with sesame seeds if using. Chill in the refrigerator for 15 minutes. Meanwhile, preheat oven to 375°F (190°C). Bake for 12-15 minutes until golden brown and crisp.
  6. Cool and serve
    Allow the cheese straws to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Serve at room temperature. These can be stored in an airtight container for up to 3 days.
