Prepare the doughIn a large bowl or food processor, combine the grated cheddar cheese and softened butter. Mix until smooth and well incorporated. Add the flour, salt, cayenne pepper, smoked paprika, thyme leaves, and garlic powder. Mix until the dough comes together. If using pecans, fold them in now.

Form the logsDivide the dough in half and place each half on a piece of parchment paper. Roll each portion into a log about 1.5 inches in diameter. Wrap tightly in the parchment paper, twisting the ends to secure. Refrigerate for at least 2 hours or overnight until firm.

Prepare for bakingPreheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. Remove the logs from the refrigerator. Brush each log lightly with beaten egg white if desired for a glossier finish.

Slice and arrangeUsing a sharp knife, slice the logs into rounds approximately 1/4 inch thick. Place the rounds on the prepared baking sheets, leaving about 1 inch between them as they will spread slightly during baking.

Bake the coinsBake in the preheated oven for 13-15 minutes, until the edges are lightly golden and the centers are set. Rotate the baking sheets halfway through baking for even browning.

Cool and serveAllow the cheese coins to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely. They will crisp up as they cool. Serve at room temperature. Store in an airtight container for up to 1 week.
