Prepare the dry ingredientsIn a medium bowl, whisk together the flour, salt, black pepper, smoked paprika, and cayenne pepper (if using) until well combined.

Create the doughIn a food processor, pulse the butter and dry ingredients until the mixture resembles coarse crumbs. Add the grated cheddar, Parmesan, and Worcestershire sauce. Pulse until the dough begins to come together. If the dough seems too dry, add ice water, one tablespoon at a time.

Form and chill the doughTurn the dough onto a lightly floured surface and form into a log about 2 inches in diameter. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes or up to 3 days. The dough can also be frozen for up to 1 month.

Preheat and prepPreheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Slice and bakeRemove the chilled dough from the refrigerator and slice into rounds about 1/4-inch thick. Place the rounds on the prepared baking sheets, spacing them about 1 inch apart as they will spread slightly during baking.

Finish bakingBake for 10-12 minutes, until the edges are golden brown and the centers are set. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
