Instructions

  1. Prepare the dough
In a large bowl, combine 1 cup of flour, yeast, sugar, and salt. Add warm water and 2 tablespoons olive oil, and beat with an electric mixer on low speed for 30 seconds. Increase to medium speed and beat for 2 minutes. Gradually stir in enough remaining flour to form a soft dough.
  2. Knead and rise
Turn dough onto a floured surface and knead until smooth and elastic, about 5-6 minutes. Place in an oiled bowl, turning once to coat. Cover with a damp cloth and let rise in a warm place until doubled in size, about 30 minutes.
  3. Prepare garlic butter mixture
While the dough is rising, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1 minute until fragrant but not browned. Remove from heat and stir in half of the Parmesan cheese, parsley, Italian herbs, and garlic powder. Set aside.
  4. Shape the breadsticks
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper. Punch down the dough and divide it into 16 equal pieces. Roll each piece into a 7-inch long rope. Place the breadsticks about 2 inches apart on prepared baking sheets.
  5. First bake
Brush the breadsticks with half of the garlic butter mixture. Bake for 8 minutes until they start to turn golden.
  6. Final bake and garnish
Remove from oven, brush with remaining garlic butter and sprinkle with the remaining Parmesan cheese. Return to oven and bake for an additional 5-7 minutes until golden brown and cooked through. The internal temperature should reach 190°F (88°C) when fully baked.
