Prepare the doughIn a large bowl, combine flour, yeast, sugar, and salt. Add olive oil and warm water, mixing until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover with a damp cloth, and let rise in a warm place for 30 minutes.

Caramelize the onionsWhile the dough rises, heat butter in a large skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for about 25-30 minutes until deeply golden and sweet. Add balsamic vinegar, thyme, salt, and pepper in the last 5 minutes of cooking. Remove from heat and let cool slightly.

Shape and top the flatbreadPreheat oven to 425°F (220°C). Punch down the risen dough and roll it out on a floured surface to form a large rectangle or oval about ¼-inch thick. Transfer to a parchment-lined baking sheet. Brush the surface with olive oil, then spread the caramelized onions evenly over the dough, leaving a small border around the edges.

Add cheese and bakeSprinkle the crumbled goat cheese and grated Parmesan over the onions. Use your fingers to dimple the dough slightly. Bake for 15-20 minutes until the crust is golden brown and crisp. Remove from the oven and let cool for 5 minutes.

Garnish and serveSprinkle the flatbread with additional fresh thyme leaves and a drizzle of olive oil if desired. Cut into squares or slices and serve warm. This flatbread can be enjoyed as an appetizer, side dish, or light meal with a green salad.
