  1. Prepare the dough
    In a large bowl, combine flour, yeast, sugar, and salt. Add olive oil and warm water, mixing until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover with a damp cloth, and let rise in a warm place for 30 minutes.
  2. Caramelize the onions
    While the dough rises, heat butter in a large skillet over medium-low heat. Add sliced onions and cook slowly, stirring occasionally, for about 25-30 minutes until deeply golden and sweet. Add balsamic vinegar, thyme, salt, and pepper in the last 5 minutes of cooking. Remove from heat and let cool slightly.
  3. Shape and top the flatbread
    Preheat oven to 425°F (220°C). Punch down the risen dough and roll it out on a floured surface to form a large rectangle or oval about ¼-inch thick. Transfer to a parchment-lined baking sheet. Brush the surface with olive oil, then spread the caramelized onions evenly over the dough, leaving a small border around the edges.
  4. Add cheese and bake
    Sprinkle the crumbled goat cheese and grated Parmesan over the onions. Use your fingers to dimple the dough slightly. Bake for 15-20 minutes until the crust is golden brown and crisp. Remove from the oven and let cool for 5 minutes.
  5. Garnish and serve
    Sprinkle the flatbread with additional fresh thyme leaves and a drizzle of olive oil if desired. Cut into squares or slices and serve warm. This flatbread can be enjoyed as an appetizer, side dish, or light meal with a green salad.
