  1. Prepare the dough
    In a large bowl, combine flour, salt, and yeast. Add warm water and olive oil, mixing until a dough forms. Knead for about 5 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.
  2. Make the meat topping
    In a large bowl, combine ground meat, chopped onion, minced garlic, diced bell pepper, tomato paste, red pepper paste, cumin, paprika, and cayenne pepper. Mix thoroughly with your hands until all ingredients are well incorporated. Season with salt to taste.
  3. Shape the flatbreads
    Divide the dough into 6-8 equal portions. On a floured surface, roll each piece into a thin oval or round shape, about 1/8 inch thick. Transfer to baking sheets lined with parchment paper.
  4. Apply the topping
    Spread a thin layer of the meat mixture over each flatbread, extending almost to the edges. Press the topping gently into the dough to ensure it adheres well during baking.
  5. Bake the lahmacun
    Preheat your oven to 475°F (245°C). Bake the lahmacun in batches for 7-9 minutes, or until the edges are golden brown and the meat is fully cooked.
  6. Serve fresh
    Remove from the oven and immediately sprinkle with chopped fresh parsley. Serve hot with lemon wedges and a sprinkle of sumac. Traditionally, lahmacun is rolled up or folded and eaten by hand.
