Crispy Alsatian flatbread with crème fraîche, onions and bacon

Prepare the doughIn a large bowl, mix flour and salt. Make a well in the center and add water and olive oil. Gradually incorporate the flour into the liquid until a dough forms. Knead for about 5 minutes until smooth and elastic. Cover and let rest for 30 minutes.

Make the cream toppingIn a medium bowl, mix crème fraîche and sour cream until smooth. Season with nutmeg, salt, and pepper. Set aside.

Prepare the toppingsIn a skillet over medium heat, cook the bacon pieces until they begin to render fat but aren't fully crisp. Remove and set aside. In the same pan, sauté the onions until translucent, about 5 minutes. Let cool slightly.

Preheat the ovenPlace a pizza stone or baking sheet in the oven and preheat to 500°F (260°C), or the highest temperature your oven allows.

Roll out the doughOn a floured surface, roll the dough into a very thin rectangle or oval, about 1/8 inch thick. Transfer to a piece of parchment paper.

Assemble the FlammkuchenSpread the cream mixture evenly over the dough, leaving a small border. Distribute the onions and bacon pieces evenly on top. Sprinkle with fresh thyme if using.

Bake the FlammkuchenCarefully slide the Flammkuchen with the parchment paper onto the hot pizza stone or baking sheet. Bake for 12-15 minutes, or until the edges are crisp and golden brown, and the toppings are bubbling.

ServeRemove from the oven and let cool for 1-2 minutes. Cut into squares or slices and serve immediately while hot and crispy.
