  1. Prepare the sauerkraut
    Rinse the sauerkraut in cold water and drain well. Squeeze out excess moisture with your hands. This removes some of the saltiness and ensures a better flavor balance in the final dish.
  2. Start the base
    In a large Dutch oven or heavy-bottomed pot, melt the duck fat over medium heat. Add the sliced onions and cook until translucent, about 5 minutes. Add the garlic and cook for another minute until fragrant. Stir in the juniper berries, bay leaves, and caraway seeds.
  3. Layer the ingredients
    Add half of the sauerkraut to the pot, spreading it evenly. Place the bacon or pork belly pieces and smoked pork loin on top of the sauerkraut. Cover with the remaining sauerkraut.
  4. Add wine and begin cooking
    Pour the Riesling or white wine over the sauerkraut. If the liquid doesn't quite cover the sauerkraut, add a little water until it's mostly submerged. Bring to a simmer, then reduce heat to low. Cover and cook for 1 hour 30 minutes, occasionally checking to ensure there's enough liquid.
  5. Prepare the potatoes
    While the sauerkraut is cooking, place the peeled potatoes in a separate pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until tender when pierced with a fork, about 20-25 minutes. Drain and keep warm.
  6. Add the remaining meats
    After the initial cooking period, nestle the pork chops and sausages into the sauerkraut. Cover and continue cooking for another 30-45 minutes until all meats are thoroughly heated and flavors are well combined.
  7. Arrange and serve
    Transfer the sauerkraut to a large serving platter. Arrange all the meats attractively on top and around the edges. Place the cooked potatoes around the platter. Sprinkle with chopped parsley for color and freshness.
  8. Final presentation
    Serve hot with Dijon and whole-grain mustard on the side. Traditional accompaniments include a cold Alsatian beer or a glass of the same Riesling used in cooking. The dish is meant to be communal, with diners helping themselves to portions of sauerkraut and their choice of meats.
