
Za'atar Manakish

Prepare the doughIn a large bowl, dissolve yeast and sugar in warm water. Let it sit for about 10 minutes until frothy. Add olive oil, salt, and gradually mix in the flour until a soft dough forms. Knead for 8-10 minutes until smooth and elastic.

First risePlace the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare za'atar mixtureWhile the dough is rising, mix the za'atar spice blend with 6 tablespoons of extra virgin olive oil in a small bowl until it forms a spreadable paste. Set aside.

Shape the manakishPunch down the dough and divide it into 6 equal pieces. On a floured surface, roll each piece into a 6-8 inch circle, about ¼ inch thick. Place them on baking sheets lined with parchment paper.

Add za'atar toppingUse your fingertips to make indentations all over the dough circles, similar to focaccia. Spread the za'atar mixture evenly over each circle, leaving a small border around the edges. Sprinkle with additional sesame seeds if desired.

Second riseLet the topped dough rest for about 15 minutes to slightly rise again.

Bake the manakishPreheat the oven to 400°F (200°C). Bake the manakish for 12-15 minutes, or until the edges are golden brown and the bread is cooked through.

ServeRemove from the oven and let cool slightly. Garnish with fresh mint leaves if desired. Serve warm, either whole or cut into wedges. Traditional accompaniments include fresh vegetables, olives, and labneh (strained yogurt).
