Prepare the brothIn a large hot pot or electric hot pot, combine chicken broth, sliced ginger, smashed garlic, and lemongrass. Bring to a simmer over medium heat and cook for 15 minutes to infuse the flavors. Keep the broth at a gentle simmer throughout the meal.

Arrange the ingredientsWhile the broth is simmering, arrange all the raw ingredients on platters around the table. Place the sliced meats on one platter, seafood on another, and vegetables and tofu on a third. Prepare small bowls of dipping sauces for each person.

Begin cookingOnce the broth is ready, each person uses their chopsticks or a small wire basket to dip and cook their chosen ingredients in the simmering broth. Thinly sliced beef and pork usually cook in 1-2 minutes, while seafood takes 2-3 minutes. Vegetables may take 3-5 minutes depending on their thickness.

Enjoy communallyAs ingredients cook, remove them from the broth, dip them in your preferred sauce combination, and enjoy. The beauty of hot pot is its communal nature - everyone cooks at their own pace, enjoying conversation while sharing a meal.
