  1. Cook the bacon
    In a large skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess grease. Break each slice in half to fit on the English muffins.
  2. Prepare the English muffins
    Split the English muffins with a fork and toast them until golden brown. If using mayonnaise, spread a thin layer on the bottom half of each muffin.
  3. Cook the eggs
    In the same skillet (with some bacon grease remaining or wiped clean and add 1 tablespoon olive oil), reduce heat to medium-low. Crack the eggs into the pan, being careful not to break the yolks. Season with salt and pepper. For over-easy eggs, cook until whites are set, about 2-3 minutes, then flip and cook for another 30 seconds. For fully cooked eggs, break the yolks before flipping.
  4. Assemble the sandwiches
    Place one egg on the bottom half of each English muffin. Top each with a slice of cheese, allowing the heat from the egg to start melting the cheese. Add 2 bacon half-slices to each sandwich. If using avocado, add slices on top of the bacon.
  5. Finish and serve
    Add hot sauce if desired, then close the sandwiches with the top halves of the English muffins. Serve immediately while still warm and melty.
