Breakfast Sandwich
Hearty morning sandwich with eggs, cheese, and crispy bacon
Ingredients
Instructions
-
Cook the baconIn a large skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess grease. Break each slice in half to fit on the English muffins.
-
Prepare the English muffinsSplit the English muffins with a fork and toast them until golden brown. If using mayonnaise, spread a thin layer on the bottom half of each muffin.
-
Cook the eggsIn the same skillet (with some bacon grease remaining or wiped clean and add 1 tablespoon olive oil), reduce heat to medium-low. Crack the eggs into the pan, being careful not to break the yolks. Season with salt and pepper. For over-easy eggs, cook until whites are set, about 2-3 minutes, then flip and cook for another 30 seconds. For fully cooked eggs, break the yolks before flipping.
-
Assemble the sandwichesPlace one egg on the bottom half of each English muffin. Top each with a slice of cheese, allowing the heat from the egg to start melting the cheese. Add 2 bacon half-slices to each sandwich. If using avocado, add slices on top of the bacon.
-
Finish and serveAdd hot sauce if desired, then close the sandwiches with the top halves of the English muffins. Serve immediately while still warm and melty.
