
Beef Teriyaki Stir-Fry

Prepare the teriyaki sauceIn a medium bowl, combine soy sauce, mirin, brown sugar, ginger, and garlic. Whisk until sugar is dissolved. Reserve 1/3 of the sauce for the final glaze and set aside.

Marinate the beefPlace the thinly sliced beef in a large bowl and pour the remaining 2/3 of the teriyaki sauce over it. Mix well to coat evenly and let marinate for at least 15 minutes while preparing other ingredients.

Prepare the vegetablesHeat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add broccoli and stir-fry for 1 minute. Add bell peppers, carrots, and onions. Stir-fry for 3-4 minutes until vegetables are crisp-tender. Transfer to a plate and set aside.

Cook the beefReturn the wok to high heat and add the remaining tablespoon of oil. Using tongs, add the marinated beef strips in a single layer (work in batches if needed to avoid overcrowding). Cook for 1-2 minutes per side until browned and just cooked through. Remove any excess liquid if necessary.

Combine and glazeReturn the vegetables to the wok with the beef. Add the reserved teriyaki sauce and bring to a simmer. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and becomes glossy, coating the beef and vegetables.

Finish and serveRemove from heat and sprinkle with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice or noodles for a complete meal.
