
Beef Chili Con Carne

Brown the beefHeat a large heavy-bottomed pot over medium-high heat. Add the ground beef and cook until browned, about 8-10 minutes, breaking it apart with a wooden spoon. Drain excess fat, leaving about 2 tablespoons in the pot.

Sauté the aromaticsAdd the diced onions to the pot with the beef and cook until translucent, about 5 minutes. Add the garlic, bell peppers, and jalapeños, and cook for another 3-4 minutes until softened.

Add spices and tomatoesStir in the chili powder, cumin, oregano, smoked paprika, and coriander. Cook for 1 minute until fragrant. Add the diced tomatoes, tomato paste, and beef broth. Stir well to combine, scraping any browned bits from the bottom of the pot.

Simmer the chiliBring the mixture to a boil, then reduce heat to low. Cover partially and simmer for 45 minutes, stirring occasionally to prevent sticking.

Add beans and finish cookingAdd the drained and rinsed kidney beans to the pot. Continue to simmer, uncovered, for another 30 minutes until the chili has thickened and flavors have melded together. Season with salt and pepper to taste.

Rest and serveRemove from heat and let the chili rest for 10 minutes before serving. This allows the flavors to settle and the chili to thicken slightly. Serve hot with your choice of toppings such as shredded cheese, sour cream, diced avocado, or chopped cilantro.
