  1. Brown the venison
    Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground venison and brown thoroughly, breaking it up with a wooden spoon, about 6-8 minutes. Season with salt and pepper.
  2. Cook the aromatics
    Add the diced onion, bell peppers, jalapeños, and garlic to the pot. Sauté until vegetables are softened, about 5-7 minutes, stirring occasionally.
  3. Add the spices
    Stir in the chili powder, cumin, smoked paprika, oregano, and cocoa powder. Cook for 1-2 minutes until spices are fragrant, coating the meat and vegetables evenly.
  4. Simmer the chili
    Pour in the crushed tomatoes and beef broth, scraping the bottom of the pot to release any browned bits. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.
  5. Add the beans
    Stir in the drained and rinsed kidney beans. Continue to simmer for an additional 30 minutes, allowing the chili to thicken and flavors to meld together. Add more salt and pepper to taste.
  6. Serve and garnish
    Let the chili rest for 10 minutes before serving. Ladle into bowls and serve with optional toppings such as shredded cheese, sour cream, chopped green onions, or diced avocado.
