
Baked Ziti
Classic Italian-American pasta bake with rich tomato sauce and cheese

Prepare the pastaBring a large pot of salted water to a boil. Cook the ziti pasta until just al dente (about 2 minutes less than package directions). Drain well and set aside.

Make the sauceIn a large skillet, heat olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 30 seconds until fragrant. If using sausage, add it now and cook until browned, breaking it up with a spoon. Add the crushed tomatoes, tomato paste, dried basil, oregano, and red pepper flakes. Season with salt and pepper. Simmer for 15-20 minutes until slightly thickened.

Prepare the cheese mixtureIn a medium bowl, combine the ricotta cheese, 1 cup of mozzarella, 1/4 cup of Parmesan, and the beaten egg. Season with a pinch of salt and pepper. Stir until well combined.

Preheat the ovenPreheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Assemble the baked zitiSpread a thin layer of sauce on the bottom of the prepared baking dish. Add half of the cooked pasta, then spread with half of the ricotta mixture. Pour half of the remaining sauce over the ricotta. Repeat with the remaining pasta, ricotta mixture, and sauce. Top with the remaining 1 cup of mozzarella and 1/4 cup of Parmesan cheese.

Bake the zitiCover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbly. If desired, broil for the last 2-3 minutes to brown the cheese further.

Rest and serveLet the baked ziti rest for 10-15 minutes before serving. This allows the pasta to set and makes it easier to portion. Garnish with fresh basil or parsley if desired.
