
Beef Lasagna Roll-Ups

Prepare the noodlesCook lasagna noodles according to package directions until al dente. Drain, rinse with cold water, and lay them flat on a baking sheet lined with parchment paper to prevent sticking.

Make the meat sauceIn a large skillet over medium heat, brown the ground beef until no longer pink, about 5-7 minutes. Add the diced onion and garlic, cooking until softened, about 3 minutes. Stir in 1 cup of marinara sauce, oregano, and basil. Simmer for 5 minutes, then remove from heat and let cool slightly.

Prepare the cheese mixtureIn a medium bowl, combine ricotta cheese, beaten egg, 1/4 cup Parmesan cheese, 1 cup mozzarella cheese, and chopped parsley. Mix well until thoroughly combined.

Assemble the roll-upsSpread 1/2 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Lay out the lasagna noodles flat and spread each with an even layer of the ricotta mixture. Top with a layer of the meat sauce. Starting from one end, carefully roll up each noodle and place seam-side down in the prepared baking dish.

Add final toppingsPour the remaining marinara sauce over the roll-ups, then sprinkle with the remaining mozzarella and Parmesan cheese, making sure to cover all the roll-ups evenly.

Bake to perfectionCover the baking dish with aluminum foil and bake at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and lightly browned.

Rest and serveLet the lasagna roll-ups rest for 5-10 minutes before serving. This allows the cheese to set slightly and makes them easier to serve intact. Garnish with additional fresh parsley if desired.
