  1. Prepare the salmon
    Preheat oven to 425°F (220°C). Pat the salmon fillets dry with paper towels and place them skin-side down on a parchment-lined baking sheet. Season with salt and pepper.
  2. Make the Parmesan crust mixture
    In a medium bowl, combine Parmesan cheese, panko breadcrumbs, parsley, dill, and lemon zest. Mix well and set aside.
  3. Create the binding mixture
    In a small bowl, whisk together Dijon mustard, mayonnaise, minced garlic, 1 tablespoon olive oil, and lemon juice until smooth.
  4. Assemble the salmon
    Spread the mustard-mayo mixture evenly over the top of each salmon fillet, then generously pack the Parmesan mixture on top, pressing gently to adhere. Drizzle with the remaining 1 tablespoon of olive oil.
  5. Bake to perfection
    Bake in the preheated oven for 15-20 minutes, until the salmon is just cooked through (internal temperature of 145°F/63°C) and the crust is golden brown and crispy.
  6. Rest and serve
    Let the salmon rest for 5 minutes before serving. Garnish with additional fresh herbs if desired and serve with lemon wedges on the side.
