  1. Prepare the tuna
    Ensure your tuna is sushi-grade and fresh. Pat it dry with paper towels and cut into 3/4-inch cubes. Place in a large mixing bowl and set aside.
  2. Make the marinade
    In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and honey until well combined. Pour over the cubed tuna and gently toss to coat.
  3. Add the aromatics
    Add the sliced sweet onion, green onions, and sesame seeds to the tuna mixture. Gently fold everything together, being careful not to break up the tuna chunks.
  4. Incorporate fresh ingredients
    Just before serving, fold in the diced avocado and cucumber. If using, sprinkle with red pepper flakes for a bit of heat.
  5. Chill the poke
    Cover the bowl and refrigerate for at least 15 minutes (or up to 1 hour) to allow the flavors to meld together and the tuna to marinate.
  6. Serve the dish
    To serve, divide the cooked rice among four bowls. Top each with a generous portion of the tuna poke mixture. Garnish with additional green onions and sesame seeds.
