  1. Prepare the wings
    Pat the chicken wings dry with paper towels. Season with salt and pepper and set aside. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Create the vindaloo sauce base
    Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Develop the flavors
    Add the vindaloo curry paste, cumin, coriander, and turmeric to the pan. Stir continuously for 1-2 minutes to toast the spices and prevent burning. Pour in the vinegar, scraping any browned bits from the bottom of the pan.
  4. Complete the sauce
    Add the tomato paste, chicken broth, and brown sugar. Stir well to combine. Bring to a simmer and cook for 10-15 minutes until the sauce has thickened slightly. Taste and adjust seasonings as needed.
  5. Marinate the wings
    Allow the sauce to cool slightly, then transfer half of it to a large bowl. Add the chicken wings and toss to coat thoroughly. Let marinate for at least 15 minutes or up to overnight in the refrigerator for deeper flavor. Reserve the remaining sauce.
  6. Bake the wings
    Arrange the marinated wings on the prepared baking sheet in a single layer. Bake for 25-30 minutes, turning halfway through, until the wings are cooked through and the skin is crispy and caramelized.
  7. Finish with sauce
    Transfer the cooked wings to a large bowl. Pour the reserved vindaloo sauce over the hot wings and toss until evenly coated. For extra flavor, you can return the sauced wings to the oven for an additional 5 minutes to set the glaze.
  8. Serve
    Transfer the wings to a serving platter, garnish with fresh cilantro leaves, and serve immediately. For an authentic touch, accompany with cooling raita or yogurt sauce to balance the heat.
