  1. Prepare the bread
    Lay out the bread slices on a clean work surface. Spread about 1 tablespoon of pesto on one side of each bread slice, covering the surface evenly.
  2. Layer the ingredients
    On four of the bread slices (pesto side up), layer equal amounts of turkey, mozzarella, tomato slices, spinach, and red onion. Season with a pinch of salt and pepper. If using, drizzle a small amount of balsamic glaze over the ingredients.
  3. Assemble the sandwiches
    Top each layered bread slice with one of the remaining bread slices, pesto side down, to create four sandwiches. Lightly brush the outside of each sandwich with olive oil on both sides.
  4. Heat the panini press
    Preheat a panini press to medium-high heat. If you don't have a panini press, you can use a grill pan or a regular skillet with another heavy pan to press the sandwiches down.
  5. Grill the panini
    Place the sandwiches in the preheated panini press and close the lid. Cook for 3-5 minutes until the bread is golden brown and crispy, and the cheese has melted. If using a skillet, cook for 2-3 minutes on each side while pressing down with another heavy pan.
  6. Serve hot
    Remove the panini from the press or skillet and let rest for 1 minute. Cut each sandwich diagonally and serve immediately while hot and crispy. Pair with a side salad or chips if desired.
