Prepare the spreadIn a small bowl, mix the whole grain mustard with the honey until well combined. Set aside.

Assemble the sandwichesLay out 4 slices of bread on a clean work surface. Spread each with the honey-mustard mixture. Top with equal portions of turkey slices, followed by apple slices, a small handful of arugula, and finally the cheddar cheese. Spread cranberry sauce on the remaining 4 slices of bread and place them on top of the assembled sandwiches, cranberry side down.

Butter the sandwichesSpread the softened butter evenly on the outside of each sandwich (top and bottom). Sprinkle with a little black pepper.

Cook the sandwichesHeat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese has melted. If needed, cover the pan with a lid for the last minute to ensure the cheese melts completely.
