Toast the riceAdd the Arborio rice to the pan and stir to coat with oil. Toast the rice for 2-3 minutes until the edges become translucent but the center remains white. This step helps the rice maintain its structure during cooking.

Deglaze and add tomatoesPour in the white wine and stir constantly until almost completely absorbed. Add the tomato paste and crushed tomatoes, stirring to combine thoroughly with the rice mixture.

Cook the risottoBegin adding the warm broth one ladle at a time, stirring frequently. Wait until each addition is almost completely absorbed before adding more. This gradual process allows the rice to release its starches, creating the creamy texture characteristic of risotto. Continue for about 18-20 minutes.

Test for donenessAfter about 18 minutes, taste the rice. It should be tender but still have a slight firmness in the center (al dente). If needed, add more broth or continue cooking for a few more minutes.

Finish with butter and cheeseOnce the rice is cooked to al dente, remove from heat. Stir in the butter and grated Parmesan cheese until melted and well incorporated. This final step, called 'mantecatura,' gives the risotto its ultimate creamy consistency.

ServeLet the risotto rest for 2 minutes. Season with salt and pepper to taste, then fold in the fresh basil leaves. Serve immediately in warm bowls, topped with additional grated Parmesan cheese if desired.
