  1. Prepare the saffron
    Place the saffron threads in a small bowl with 2 tablespoons of warm water. Let it steep for at least 5 minutes to release its color and flavor.
  2. Sauté the onions
    In a large, heavy-bottomed pan, heat 2 tablespoons of butter and olive oil over medium heat. Add the finely diced onion and cook until translucent but not browned, about 5-7 minutes, stirring occasionally.
  3. Toast the rice
    Add the rice to the pan and stir to coat with the butter and oil. Toast the rice for 2-3 minutes until the edges become translucent but the center remains white. This step is crucial for achieving the right texture.
  4. Add wine and saffron
    Pour in the white wine and stir constantly until it is completely absorbed. Then add the saffron with its soaking water, stirring to distribute the golden color evenly throughout the rice.
  5. Add stock gradually
    Begin adding the warm chicken stock one ladle at a time (about 1/2 cup), stirring frequently. Wait until each addition is almost completely absorbed before adding the next. This gradual process takes about 18-20 minutes total.
  6. Check for doneness
    The risotto is done when the rice is al dente - tender but still with a slight bite in the center. The consistency should be creamy and flowing, not dry or stiff. You may not need all the stock, or you might need a little more.
  7. Finish with butter and cheese
    Remove the pan from the heat and stir in the remaining tablespoon of butter and the grated Parmigiano-Reggiano cheese. Season with salt and pepper to taste. This final step, called 'mantecatura,' creates the signature creaminess of risotto.
