  1. Toast the bread
    Preheat a grill pan or broiler to medium-high heat. Brush the sourdough slices with olive oil on both sides. Grill or broil the bread for 1-2 minutes on each side until golden and toasted with light grill marks.
  2. Prepare the garlic rub
    While the bread is still warm, rub each slice with the cut side of a garlic clove. This will infuse the bread with a subtle garlic flavor without overwhelming the delicate burrata.
  3. Assemble the tartines
    Place the toasted bread slices on a serving platter. Tear each burrata ball in half and gently place one half on each slice of bread, allowing the creamy center to spill slightly onto the bread.
  4. Add tomatoes and seasonings
    Arrange the sliced heirloom tomatoes on top of and around the burrata. Drizzle generously with extra virgin olive oil and balsamic glaze. Season with flaky sea salt, freshly ground black pepper, and red pepper flakes if using.
  5. Garnish and serve
    Scatter the torn or sliced basil leaves over the top of the tartines. Serve immediately while the bread is still slightly warm and the contrast between the crispy bread and creamy cheese is at its best.
