  1. Brew the tea
    In a medium saucepan, bring water to a boil. Add green tea leaves or tea bags and remove from heat. Let steep for 5 minutes. Strain the tea leaves or remove tea bags and return the tea to the saucepan.
  2. Sweeten and flavor the tea
    Return the saucepan to low heat. Add sugar and stir until completely dissolved. Remove from heat and stir in vanilla extract and almond extract (if using). If using food coloring for a more vibrant green color, add it now and stir well.
  3. Cool the tea
    Transfer the tea to a heat-safe pitcher and allow it to cool to room temperature, about 30 minutes. You can speed up this process by placing the pitcher in an ice bath if desired.
  4. Add milk mixture
    In a separate bowl, whisk together the sweetened condensed milk and evaporated milk until smooth. Stir this mixture into the cooled tea until well combined.
  5. Chill and serve
    Refrigerate the tea until cold, at least 2 hours or overnight for best flavor. To serve, fill tall glasses with ice cubes, pour the Thai green tea over the ice, and garnish with fresh mint leaves if desired.
  6. Optional layered presentation
    For the iconic layered look, fill glasses 3/4 full with ice, pour in the tea mixture (without the milk), then slowly pour the condensed milk mixture over the back of a spoon so it floats on top. Stir before drinking.
