Prepare the sauceIn a small bowl, whisk together the fish sauce, soy sauce, lime juice, and brown sugar until the sugar dissolves. Set aside.

Cook the aromaticsHeat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic, grated ginger, and chopped chili. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.

Cook the chickenAdd the ground chicken to the skillet, breaking it up with a wooden spoon. Cook for 5-6 minutes until the chicken is no longer pink and is starting to brown slightly.

Add the saucePour the prepared sauce over the chicken and stir to combine. Continue cooking for another 2-3 minutes until most of the liquid has evaporated but the mixture is still moist.

Finish the fillingRemove the skillet from heat and stir in half of the green onions, cilantro, and mint. Allow the mixture to cool slightly.

Assemble the lettuce cupsArrange the lettuce leaves on a serving platter. Spoon the chicken mixture into each leaf, creating individual cups.

Garnish and serveSprinkle the filled lettuce cups with the remaining green onions, herbs, and the chopped peanuts. Serve immediately with lime wedges on the side for squeezing over the top.
