Prepare the broth baseIn a large pot, add beef bones and enough cold water to cover them by 2 inches. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and rinse the bones thoroughly to remove impurities. This will result in a clearer broth.

Make the spice pasteUsing a mortar and pestle or food processor, grind together the garlic, cilantro roots, and black peppercorns until a paste forms. Set aside for later use.

Create the rich brothIn a large pot, heat the vegetable oil over medium heat. Add the spice paste and stir-fry until fragrant, about 1-2 minutes. Add the beef brisket pieces and brown them on all sides, about 5 minutes. Add the cleaned beef bones, cinnamon sticks, and star anise. Pour in 10 cups of water, bring to a boil, then reduce heat to low. Simmer, partially covered, for about 2 hours or until the beef is tender.

Season the brothOnce the beef is tender, add the Thai sweet soy sauce, fish sauce, and palm sugar. Stir until the sugar dissolves. If using pork blood, whisk it in gradually. Simmer for another 15 minutes to let the flavors meld. Taste and adjust seasonings as needed.

Prepare the noodlesWhile the broth is finishing, soak the rice noodles in room temperature water until they're pliable but still firm, about 30 minutes. Drain well. Bring a separate pot of water to a boil and cook the noodles for 2-3 minutes or until al dente. Drain and rinse under cold water to prevent sticking.

Assemble the soupDivide the cooked noodles among four serving bowls. Arrange slices of the cooked beef brisket on top. Carefully ladle the hot broth over the noodles and meat.

Add the garnishesServe immediately with a side plate of fresh bean sprouts, Thai basil leaves, cilantro, lime wedges, and sliced chilies, allowing each person to garnish their soup according to taste. Traditionally, additional condiments like ground dried chili, sugar, fish sauce, and vinegar infused with chilies are placed on the table for diners to customize their soup.
