  1. Prepare the marinade
    In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, vegetable oil, minced garlic, grated ginger, minced lemongrass, ground coriander, ground turmeric, and red pepper flakes. Whisk together until the sugar is completely dissolved.
  2. Marinate the beef
    Add the beef cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, turning occasionally to ensure even marination.
  3. Prepare the skewers
    Remove the beef from the refrigerator 30 minutes before cooking to bring it to room temperature. Thread 4-5 pieces of marinated beef onto each pre-soaked wooden skewer, leaving a small space between each piece to ensure even cooking.
  4. Preheat the grill
    Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  5. Grill the skewers
    Place the beef skewers on the preheated grill and cook for 2-3 minutes per side, rotating to ensure all sides are cooked evenly. For medium-rare, cook until the internal temperature reaches 135°F (57°C). For medium, cook until the internal temperature reaches 145°F (63°C).
  6. Rest and serve
    Transfer the grilled skewers to a serving platter and let them rest for 5 minutes before serving. This allows the juices to redistribute within the meat. Sprinkle with fresh chopped cilantro just before serving.
